Georgetown Liquor Company Reopens, With New Ownership And 100% Vegan Menu

Georgetown Liquor Company reopen for business? Bless the vegan gods for this one.

The beloved south Seattle bar and restaurant is back at it with new ownership and a fully plant-based menu.

Alan Threewit, co-owner of Capitol Hill’s Highline Bar, has taken over, and GLC is back to slinging delicious burgers, sandwiches, cocktails, and more.

This is the second Seattle bar to switch to a fully plant-based menu, after Shelter Lounge Ballard made the transition back in September of 2020.

New Menu

GLC’s menu is packed with veganized classics, ranging from a BBQ pulled pork sandwich made with soy curls and topped with tangy coleslaw, to a Blue Cheese Burger, featuring an impressive house-made patty.

Recent diners are already raving about the hearty French Dip sandwich as well, stacked with house-made roast beef seitan.

Coleslaw, a green salad, and a not-to-be-missed potato salad are available as sides. Seriously - don’t skip the potato salad.

GLC’s bar program also features Highline Bar’s signature infused liquors. Concoctions such as Habanero-infused tequila, pineapple-infused rum, and vodka with garlic, peppercorn, and basil can be found in the bar’s house cocktails or ordered on their own.

Get cocktails like the St. Vitus – a martini with lavender-infused vodka and St. Germain, or an Agent Orange – an old-fashioned with orange-cherry-infused bourbon.

History Of Georgetown Liquor Company - A South Seattle Community Staple

GLC first opened in 2007 and offered both vegetarian and vegan options. With very few meat-free restaurants in South Seattle, GLC was an essential part of the restaurant scene, as well as a local hangout.

GLC was a gathering place for the neighborhood with its full bar and crowd-pleasing food menu. When it closed in September 2020, its loss was widely mourned.

Luckily, GLC’s absence did not last long and reopened with new ownership - and an exclusively vegan menu - in December 2020. 

While the mainstays from GLC’s previous menu are no longer being offered, there are echoes of Highline’s beloved sandwiches on the new menu.

The original GLC menu did not offer fried food, which has not changed with the new menu. This might surprise fans of Highline’s deep-fried seitan fingers and tofu patties, but there is one major difference in the GLC kitchen: There is no deep fryer.

Threewit says that it would take a major remodel to install one. It's a small kitchen space with no gas line to the kitchen. There are no plans to add one in the future, but Threewit adds “Never say never.”

Currently, GLC is open 12:00-8:00 pm every day, and for now, is takeout only.

Brunch won’t be offered for now; Threewit says that he plans to bring it back once dine-in service returns and COVID shut-downs are a thing of the past.

He points out that unlike lunch and dinner, brunch tends to be a social event that people want to enjoy in person, which doesn’t translate well to takeout.

At a time where restaurants are suffering greatly and closing at alarming rates, it is encouraging to not only be able to save a beloved favorite but to give it new life.
